Gruyere Gougeres



Ingredients
·   1 cup water
·   1 stick butter
·   1 cup bread flour
·   5 eggs
·   1 tsp salt
·   1 tsp sugar
·   ¾ cup gruyere cheese
·   ¼ cup parmesan cheese

Directions:
  1. Preheat oven to 425°F.
  2. Melt butter over medium high heat with the water, salt, and sugar. Bring to a simmer. Add the flour all at once, lower heat to medium, and continue stirring over heat until dough comes together and pulls away from the sides of the pan. Cook for about 1 minute more—a film should form on the bottom of the pan—then remove from heat and let cool for a few minutes.
  3. Add the eggs one at a time, making sure each egg is fully incorporated before adding the next. Dough should be smooth and pasty. Add the cheese and mix until incorporated.
  4. Put dough into a piping bag or plastic bag and pipe onto cookie sheets lined with parchment paper about 2 inches wide.
  5. Sprinkle with some extra cheese or brush with an egg and water mix. 
  6. Bake for 15 minutes at 425, then reduce the temperature to 375 and cook for another 20 minutes until puffed and golden. Serve right away!
